Frost Bitten Ice Riesling is made from Yakima Valley Riesling grapes which were frozen post-harvest. The result is a concentrated press juice with over 36 Brix. The finished product is beautiful sweet wine with 17.2% residual sugar, similar to that of a traditional Ice Wine, but at a fraction of the cost. The wine shows flavors of ripe pineapple, candied apricot and pear with sublime undertones of sugarcane and honeysuckle. Frost Bitten Ice Riesling is not legally an ice wine, but rather a dessert wine made via freezing. The traditional method of making ice wine is to wait for the weather to turn cold enough for a hard freeze so that grapes freeze on the vine. Once this occurs, they are quickly picked and pressed.
