For over 40 years, the grappas of Michele Chiarlo have been synonymous with elegance and a cleansing taste. In 2015, the grappas of the Palás range were created: Modern, silky and charming.
We use small bain marie copper stills with a discontinuous cycle: equipment which ensures delicate grappas with strong characteristics of the original grape.
It is important to distill fresh pomace which has not been pressed, meaning not particularly rich in must: we focus our attention on distilling a few days after the end of fermentation.
Our most important grappa, from the pomace of selected Nebbiolo, is aged over time in barrels of different woods. This results in a distillate of uppermost class. Rich, complex and inviting, with notes of apricot, cocoa and red fruits.
