The Tuffo cuvée is intensely aromatic with flora and loaded with flavors of quince and apple. It has a wonderful complexity to it, hitting at first with burst of fresh fruit and finishing with a vibrant minerality and layers of acidity. This beauty is incredibly food friendly.
All chemical herbicides, pesticides and fertilizers are scrupulously avoided. The wines are vinified and aged in the domaine’s fantastic cave that has been burrowed into solid limestone. vinified by parcel in small thermoregulated stainless vats. Batonnage is included, but not malolactic fermentation. It is aged on its fine lees in stainless tanks for 8-9 months.
